How to make Aluwa

Aluwa is another Sri Lankan Sweet that can be enjoyed during Sri Lankan and Tamil New Year and festivals. By making some variation in the recipe, this is available as Kaju Aluwa, Kiri Aluwa or Pani Aluwa. However, it is called, white in color and is tastier and easier to make than other traditional Sri Lankan Sweets. 

The mixture needs to reach the right consistency before it can be shaped. So the hardest part of making Aluwa is actually getting the mixture to the right consistency. 

If the Aluwa is medium in size, it is easier to eat and tastes better. 

As a Sri Lankan I enjoy Aluwa every year. It is really soft and delicious sweet. I like to taste the different flavors of the world. A recipe of a sweet in our country is shared to give a new taste to you food lovers.

You will need 

500 g of rice of flour 

500 g of sugar 

200 ml of water

Two tablespoons of butter

Four cardamoms 

Salt Pinch of 

Let's Make it

  • Vish/Home Cooking
    First you need to fry the rice flour. It is important to roast the rice flour correctly. Place a saucepan on the stove and add the rice flour to it and stir on low heat, do not burn it too much as it will affect the overall color of the flour. Roast it until it turns slightly white. Keep the fired flour aside. About 50 g fired rice flour should be kept separately. (This is to sprinkle on the Aluwa)
  • Now put 500 g of sugar in a saucepan and add 200 ml of water to it. Heat the stove on medium flame and boil the sugar. You need to bubble well and melt the syrup. Mix the syrup well about 6 to 7 minutes. When syrup is poured down with a spoon, the last drop should be stretched down.

    Let the syrup cool down.
  • Crush the cardamoms slightly in a mortar, remove the outer shell and put the seeds inside again in the mortar and grind until they are powder.
  • Add it to the flour. Also add some salt to it and mix well. cashew can be added at this time if desired. If adding cashews, cut them into small pieces and add them. 
  • Before making the Aluwa, the tray should be prepared for cutting the Aluwa. For that, we have to sprinkle a little of the flour that we removed separately on the tray.

    Now add the prepared syrup to the flour bowl little by little using a spoon and mix well. (Do not add syrup at once) Now remove the spoon and mix well by hand until the mixture comes together.
  • Finally, add two tablespoons of butter and quickly mix well.

  • Now put the mixture on the tray and thin it quickly. After it is well thinned, sprinkle the separately removed flour on the Aluwa mixture. 

  • Then cut pieces according to desired shape. Then let it harden well. Then keep well packed and you can serve or enjoy.
